What is Kanazawa Curry?

My name is Tomoko Omori, President/CEO of Go! Go! Curry! America. We are in the middle of a global crisis caused by novel coronavirus, and everyone is living with uncertainty and anxiety. However, I strongly believe that we will win this battle with the virus and it’s important to connect each other digitally in this time of social distancing. From another point of view, it’s a good chance to learn and explore something new. So, we’ve begun to grow our Go! Go! Curry! blog to share stories about our company and Japan’s curry culture with you.
In this entry, I’d like to talk about “Kanazawa curry”. It is the type of curry that our curry is based on. As the name suggests, it originates in the city of Kanazawa, located in the Northwestern part of Japan, facing the Sea of Japan. The city has a thriving history of traditional, elegant culture going back for centuries. If you haven’t been there, we highly recommend making a visit! Kanazawa curry is a bit of a newcomer considering the city’s long history, and first emerged during the 1960s. The popular dish has several distinctive features: it starts with layers of sticky rice, then it’s covered with our hearty curry sauce. Finally it’s topped with a freshly fried katsu (cutlet), and tonkatsu sauce (umami-rich, thick sauce for cutlets). It’s Japanese comfort food from top to bottom! Second, it’s always served with shredded cabbage on the side. Third, it’s served on a stainless steel plate, along with a spork!
In general, the Japanese curry dish is known to have a thicker curry sauce as compared to those in the other countries. However, the curry sauce of the Kanazawa style is even thicker than the standard Japanese curry. It’s also relatively mild, making it taste great with hearty katsu and tonkatsu sauce. As you bite into, you want more and more!
